From Meatless Monday, here are a bunch of ideas for grilling vegetables and even fruits.

Court the usual suspects. Traditional candidates for the grill are peppers, carrots, beets, turnips, zucchini, corn, green beans, asparagus, tomato (firm ones), onion, eggplant, garlic (whole cloves), potato, squash, peppers, broccoli, cauliflower, and turnips. For fruits, consider peaches, apples, pineapple, and figs.

But also try the unusual. Avocado, artichoke, romaine lettuce, portobello mushroom, and watermelon are just some of the new grillees that are becoming trendy.

Oil down first. Many vegetables need just a light brushing of olive oil before grilling. For extra kick, add spices and marinate overnight,

I also like the idea of marinating tofu. Let’s be honest, chicken is kind of bland, and it is the wonderful marinades and sauces we put on it that makes it so delicious. So if it is the sauce we really want to taste, we can try dropping the chicken.

Finally, grilling pizza is an interesting idea that had never occurred to me before.

The Human Footprint and the Last of the Wild

There is little debate in scientific circles about the importance of human influence on ecosystems. According to scientists’ reports, we appropriate over 40% of the net primary productivity (the green material) produced on Earth each year (Vitousek et al. 1986, Rojstaczer et al. 2001). We consume 35% of the productivity of the oceanic shelf (Pauly and Christensen 1995), and we use 60% of freshwater run-off (Postel et al. 1996). The unprecedented escalation in both human population and consumption in the 20th century has resulted in environmental crises never before encountered in the history of humankind and the world (McNeill 2000). E. O. Wilson (2002) claims it would now take four Earths to meet the consumption demands of the current human population, if every human consumed at the level of the average US inhabitant. The influence of human beings on the planet has become so pervasive that it is hard to find adults in any country who have not seen the environment around them reduced in natural values during their lifetimes—woodlots converted to agriculture, agricultural lands converted to suburban development, suburban development converted to urban areas. The cumulative effect of these many local changes is the global phenomenon of human influence on nature, a new geological epoch some call the “anthropocene” (Steffen and Tyson 2001). Human influence is arguably the most important factor affecting life of all kinds in today’s world (Lande 1998, Terborgh 1999, Pimm 2001, UNEP 2001).

Yet despite the broad consensus among biologists about the importance of human influence on nature, this phenomenon and its implications are not fully appreciated by the larger human community, which does not recognize them in its economic systems (Hall et al. 2001) or in most of its political decisions (Soulé and Terborgh 1999, Chapin et al. 2000). In part, this lack of appreciation may be due to scientists’ propensity to express themselves in terms like “appropriation of net primary productivity” or “exponential population growth,” abstractions that require some training to understand. It may be due to historical assumptions about and habits inherited from times when human beings, as a group, had dramatically less influence on the biosphere. Now the individual decisions of 6 billion people add up to a global phenomenon in a way unique to our time. What we need is a way to understand this influence that is global in extent and yet easy to grasp—what we need is a map.

Until recently, designing such a map was not possible, because detailed data on human activities at the global scale were unavailable. The fortunate confluence of several factors during the 1990s changed this situation. Rapid advances in earth observation, using satellite technology pioneered by NASA and other space agencies, meant that, for the first time, verifiable global maps of land use and land cover were available (Loveland et al. 2000). The thawing of the cold war and calls for efficiency in government meant that other sources of global geographic data, for example, on roads and railways, were released to the public by the US National Imagery and Mapping Agency (NIMA 1997). Improved reporting of population statistics at subnational levels enabled geographers to create global digital maps of human population density (CIESIN et al. 2000). Finally, advances in geographic information systems (GIS) have provided the integration technology necessary to combine these data in an efficient and reproducible manner. Although the datasets now available are imperfect instruments, they are of sufficient detail and completeness that scientists can map the influence of humans on the entire land’s surface.

Sixteen years of change in the global terrestrial human footprint and implications for biodiversity conservation

Human pressures on the environment are changing spatially and temporally, with profound implications for the planet’s biodiversity and human economies. Here we use recently available data on infrastructure, land cover and human access into natural areas to construct a globally standardized measure of the cumulative human footprint on the terrestrial environment at 1 km2 resolution from 1993 to 2009. We note that while the human population has increased by 23% and the world economy has grown 153%, the human footprint has increased by just 9%. Still, 75% the planet’s land surface is experiencing measurable human pressures. Moreover, pressures are perversely intense, widespread and rapidly intensifying in places with high biodiversity. Encouragingly, we discover decreases in environmental pressures in the wealthiest countries and those with strong control of corruption. Clearly the human footprint on Earth is changing, yet there are still opportunities for conservation gains.

Shrinking the Earth: The Rise and Decline of American Abundance

Here is the Amazon description of a new(ish) book by Donald Worster called Shrinking the Earth: The Rise and Decline of American Abundance.

The discovery of the Americas around 1500 AD was an extraordinary watershed in human experience. It gave rise to the modern period of human ecology, a phenomenon global in scope that set in motion profound changes in almost every society on earth. This new period, which saw the depletion of the lands of the New World, proved tragic for some, triumphant for others, and powerfully affecting for all.

In this work, acclaimed environmental historian Donald Worster takes a global view in his examination of the ways in which complex issues of worldwide abundance and scarcity have shaped American society and behavior over three centuries. Looking at the limits nature imposes on human ambitions, he questions whether America today is in the midst of a shift from a culture of abundance to a culture of limits-and whether American consumption has become reliant on the global South. Worster engages with key political, economic, and environmental thinkers while presenting his own interpretation of the role of capitalism and government in issues of wealth, abundance, and scarcity. Acknowledging the earth’s agency throughout human history, Shrinking the Earth offers a compelling explanation of how we have arrived where we are and a hopeful way forward on a planet that is no longer as large as it once was.

It’s interesting to think that humanity took a few thousand years to “deplete” Europe and Asia, and now we have depleted North and South America in just a few hundred years. If there were another sizable continent out there, we could probably deplete it in a few decades, and the one after that in a few years, then months, etc.

But there aren’t any more out there, unless and until we are talking about going into space. This reminds me of a couple plausible near-future science fiction series on exactly this theme: Red Mars by Kim Stanley Robinson and Coyote by Allen Steele. Both worth reading, although I found the latter a bit more entertaining.

Earth Overshoot Day

Today (I’m writing on August 8) has been named Earth Overshoot Day 2016.

Earth Overshoot Day marks the point where we have pulled more resources, like fish, fuel and water, out of the planet than can be replenished. It’s also the point where we have put more pollution into the air and water than Earth can successfully deal with. Humans have been doing that for a long time, but ever since 1971, Overshoot Day has crept disconcertingly earlier and earlier. This year, Overshoot Day is a full 5 days earlier than last year. That’s the earliest it has ever been.

This is another way of attempting to communicate the ecological footprint concept. It would take 1.5 Earths to produce the amount of ecosystem services we deplete in one year, so that means we have depleted them two thirds of the way through the year, or month 8 of 12. The footprint is growing every year, which doesn’t just mean things are getting worse, it means they are getting worse at a faster rate. We don’t know how much worse they can get before our civilization enters decline, or whether the decline would be a sudden catastrophic one or a long slow one (which could have already begun without our realizing it.) But we know logically that there is such a point of no return. Reducing our footprint would be good, but it would just mean things were getting worse at a slower rate. To actually reverse our path toward the tipping point, we would have to reduce our footprint all the way to 1 Earth or push Earth Overshoot Day all the way back to December 31.

  • I was a little side-tracked by U.S. Presidential politics. Nate Silver launched his general election site, putting the odds about 80-20 in favor of Hillary at the beginning of the month. The odds swung toward Trump over the course of the month as the two major party conventions took place (one in my backyard), but by the end of the month they were back to about 70-30 in favor of Hillary. During the month I mused about NAFTA, the fall of the Republic, the banana republicThe Art of the Deal, how to debate Trump, and Jon Stewart,
  • It’s really okay to cook pork chops medium rare.
  • It’s really hard to predict earthquakes. Many scientists think it is impossible, but once upon a time they thought that about predicting weather.

meatless Monday, July 4

Since I’m writing this on July 4, what the hell, I’ll write about burgers today. There is a sustainability connection after all because if more of us were vegetarians, our ecological footprint would be less, and as developing countries not only grow in population, but people shift to eating a lot more meat than they used to, the footprint can grow explosively. Certain traditional nomadic ways of life might get a pass, if they are grazing their animals on natural vegetation on lands that are not suitable for crops. Most of us don’t fall in this category. So, a blog called Meatless Monday provides us with a number of meatless “burger” recipes, plus ideas for grilling veggies. I’m determined to give some of these a shot.

I’m a hypocrite to some extent though – I admire vegetarians and I’ve reduced my meat consumption over the years, but I still like it and find it hard to imagine giving it up entirely. Certainly not eggs and cheese. I also have a policy that if someone cooks something for me, I eat it! If like me you like the idea of being vegetarian for environmental and ethical reasons (and environmental reasons are ethical reasons), but dang it you still like meat, I think the best way to think of it is as a treat – save it for holidays and special occasions, or give yourself a cheat meal once a week. Anyway, just to round out this post here are a few points/links about meat:

  • If you decide to indulge in a pork chop for that special occasion or cheat meal, it is okay to cook it medium rare. This article recounts the horrors of trichinosis, then says it is no longer an issue in the modern world. You should still cook ground meat thoroughly, however.

  • China has a new(ish) sustainability plan called “ecological civilization” that weaves together urban and regional planning, environmental quality, sustainable agriculture, habitat and biodiversity concepts. This is good because a rapidly developing country the size of China has the ability to sink the rest of civilization if they let their ecological footprint explode, regardless of what the rest of us do. Maybe they can set a good example for the rest of the developing world to follow.
  • Genetic technology is appearing to provide some hope of real breakthroughs in cancer treatment.
  • There is still some hope for a technology-driven pick-up in productivity growth.

1 billion dogs

I never thought to even wonder how many dogs there are in the world. But according to this article, about a billion. I don’t know if that is morally right or wrong. I like dogs. They are generally benign, kind-hearted creatures, and you could certainly make an argument that the world would not be as good a place without them. But they certainly have an ecological footprint. The article contrasts dogs and wolves, which have been systematically eradicated in many cases. So while dogs are neat creatures in many ways there are probably many wild creatures that might exist out there if they did not. Now we could examine this same moral conundrum with respect to a certain species of intelligent hairless ape…
